If you mean the colour of the line(s) in the graph (not the axis etc..),
then there is the instruction "color" (with no u) that you can use in the
plot directive:

plot {
color           0000FF
sourcer         something
title
.../...
}

I imagine that you will have to delete all the .png files if you have
already some to re-create the right color.
