Would it be possible  to get a copy of someone's start_orcallator.sh?
My start_orcallator doesn't have a .sh at the end and I'm unable t see where
to define the WEB_SERVER ?

That's the problem.  You need to get start_orcallator.sh set up
to tell orcallator.se to record the HTTP logs.  Mess around
with it until you see the data in the orcallator output files.
